Weddings that don't cost the Earth
1 'My ring is recycled gold, my dress was made from corn fibre and all our invitations were
made from hemp. And for our honeymoon, we went on a cycling trip in Hawaii,' Lisa Wilkins says
animatedly, giving us the rundown on her environmentally friendly wedding. The ceremony took
place in a Japanese garden in New York, where guests dined on an organic feast. Vintage crystal
vases were filled with organic fruit, an elegant and pesticide-free substitute for the typically
imported cut flower arrangements. The jars of local honey given out as wedding favours were
also lauded by guests as a pleasant change from the pointless junk one usually receives. It's clear
there's nothing second-rate about eco-chic.
2 'Mike and I wanted our wedding to be stylish and tasteful, but we didn't want to compromise
our values just because this was our special day,' explains Lisa, who is not alone in her passion for
green nuptials. Shigeru Komori, an official in Japan's Ministry of the Environment, recently held a
green wedding in Tokyo. He and his wife used the opportunity to remind guests of the importance
of considering the environment while planning for the happiest day of your life. As more couples
take the eco-wedding route, wedding planners are rushing to adapt to this new trend. 'It's a
15 multimillion-dollar industry and those who don't consider the environmental impact of their work
will miss out on potential clients,' explains Richard Wang, a business professor at California State
University.
3 People in Hong Kong have already been introduced to green weddings, but the concept has
yet to take root. This is hardly surprising, given that the average Hong Kong citizen produces
20 6.5 tonnes of carbon dioxide per year, twice the world norm. Still, it doesn't mean that it's not
possible to hold an eco-wedding here. Sticking to the mantras 'reduce, reuse, recycle' and 'buy
organic, buy local', here are some things to keep in mind when planning for your upcoming nuptials.
4 Everyone knows diamonds are a bride's best friend. Unfortunately, a diamond's journey
25 from rock to ring is less than glamorous and is often associated with soil erosion. Unless you buy
from an accredited source, you may end up with a conflict diamond mined in Africa, where it has
helped fund wars. A lab-grown, cultured diamond is a great alternative, kinder to the environment
and your wallet too.

excellent standard of comfort, cleanliness and service.' As for us, we can do our part by having
60 flower arrangements replaced by potted plants or beeswax candles for a more environmentally

Re: Disgraceful trip to Oktoberfest in Germany
Dear Sir/Madam,
1 I have just returned from a holiday organized by your company, Golden Dragon
Holidays. I went on the package tour of southern Germany, timed to coincide with the
famous food and beer festival Oktoberfest in Munich. I had wanted to visit Munich for
many years, so I was thrilled when I learnt that your company was offering holiday
packages to this event. I thought at first that the price of $45,000 was too much, but I was
willing to pay the exorbitant price to fulfil my dream of being part of this famous festival.
The tickets arrived and I spent the next few weeks planning what I would do and see,
buying new clothes and getting excited about my holiday.
2 Unfortunately, the problems began on day one. We were promised a 'comfortable trip
with a world-class airline' that would 'deliver you to your destination feeling refreshed'. In
fact, we flew with an airline I had never even heard of, and the flight departed three hours
behind schedule. In addition, the on-board food was terrible. Breakfast was lukewarm and
inedible, and the airline had too little food for lunch, so I was left starving.
3 Finally, we arrived in Munich and checked into our hotel. I had checked my original
booking, which was for a 'five-star hotel'. The hotel we stayed at was no such thing. There
was not enough hot water, which meant that I had to take a cold shower. The lodgings were
filthy, and I saw cockroaches running around in the bedroom. To add insult to injury,
your company had booked too few rooms. This meant that I had to share my room with a
complete stranger! I protested to your tour guide, but he insisted that he could do nothing
to help me. Breakfast was included in the room price, but I could barely eat it, seeing that it
consisted of cold meat and cheese, I spent most of my holiday feeling famished.
4 Eventually, the day came for us to go to the Oktoberfest. I put all my disappointment
behind me and was determined that I would enjoy my day out. I should have known by now
that I would not get what I had paid for. Your company had booked tickets at the edge of
the festival, where there were very few people and there was very little atmosphere. We had
to wait 40 minutes just to be served a beer. Then, we were told we would have to pay extra
for the food, which cost a fortune. Seeing that none of us spoke German, your tour guide
ordered the food for us, and we were served garlic bread and spaghetti Bolognese. I do not
believe these are traditional German dishes! I was expecting to try the famous bratwurst
sausages and Black Forest gateau. I still have not tasted these delicacies.
I cannot express my disappointment strongly enough. I feel that this tour package was
advertised incorrectly and was overpriced. Can you please explain how it is that, despite
paying $45,000, I had to share a room with a stranger, go hungry and not enjoy any of
the traditional foods associated with Oktoberfest? I believe your company was extremely

1 When we talk about Middle Eastern fare, dips, falafels and tagines inevitably come to mind.
But Arabic restaurant Oh Food sheds new light on this underrated cuisine. Hidden inside a
nondescript commercial building, this tiny 26-seat restaurant doesn't regurgitate stereotypical
Arabic cooking. Rather, it provides a more realistic reflection of the Middle East's current
culinary scene.
2 At first glance, Oh Food doesn't seem extrovertly Arabic. Aside from the beautifully
embroidered tablecloths and shisha pipes (available from 6 p.m. to 8 p.m.), there's little other
ornamentation that speaks of owner Omar Ayash's native Syrian roots. Food-wise, don't
expect the restaurant to serve your standard dishes. Even the chickpea hummus ($20) - the only
dip on offer - is a distinctly Syrian rendition. It has a smoother, runnier consistency than most
other ground chickpea pastes and it's served with warmed, home-made loaves instead of the
more common pita basket. The rest of the menu ranges from dishes that are indigenous to the
Arab nation and ones that have steadily assimilated into its culture.
3 Similar treatment is given to the mains, which are all meat-heavy and come with a choice of
Arabic rice, biryani or bread with French fries (these are supposed to be hugely popular in the
Middle East). Everything is prepared without additives and flavoured using only natural herbs
and spices, which makes the dishes aromatic. The roast chicken sheesh taook ($50) is blanketed
under a white sauce that's subtly spiced with cumin and tamarind. The white meat is especially
delicious and moist, without the least bit of gristle. The sauce is on the mild side but pairs
especially well with a side of long-grain rice. The minced meat patties, which are shaped into fat
cigars, are a bit more spicy. They are completely mouth-watering.
4 To end the meal, traditionalists can try the milk curd pudding ($15). The creamy dessert
wobbles ever-so-slightly under the weight of chopped pistachios. These are imported from Syria
and add a delicate floral taste to the whole affair. Alternatively, there's an Arab-adapted apple
pie ($20) on the menu. The sweet pastry is more like a fusion between cake and shortbread: a
soft and intensely buttery base that's smothered in custard before being heaped over with stewed
apples, raisins and a crunchy topping.
5 Oh Food may not serve up your typical Middle Eastern experience but, then again, that's not
what the restaurant aims for. After all, despite its rich culinary history, the Middle East's dining
scene has also been subjected to the effects of globalization. If Korea can have fried chicken and
Japan can have hamburger steaks, why shouldn't Syria have sandwiches and fries?
